ENSO 円相的創立,源於店主 Fish 在20歲時對精釀啤酒的熱忱。她不滿於香港品飲文化薄弱,以及對女性飲酒的偏見,立志十年後在九龍區開設餐廳酒吧,推廣精釀啤酒。這十年她累積管理經驗,考取啤酒和清酒侍酒師資格,希望將 ENSO 建成一個充滿人情味、讓大家感到安全開心的「第二個家」。
若要用三個形容詞來概括 ENSO 円相這個品牌,那便是「人情味」、「專業」和「有氣氛」。這三個詞彙,不僅是 Fish 創立店舖的初心與核心,更是她希望客人能實際感受到,並讓員工與她一同營造的氛圍。她深信,只有員工感到開心,才能將這份快樂傳遞給客人,共同創造出一個充滿活力的空間。
ENSO 開業初期便遭遇疫情重創,禁止堂食、資金燒盡。Fish 不願放棄,失眠中想出對策,發起「Beer Flight Club」等活動,聯合其他酒吧「一起撐下去」,鼓勵消費。她堅信「大家一起好,旺應該要一起旺」,積極尋求合作。客人的肯定與口碑相傳,成為她堅持下去的強心針。
品牌故事
靈感枯竭的自救:交流、探索與組合
Fish 的「頹廢」狀態大多與生意不佳或活動乏人問津有關。然而,她從不讓自己沉淪,通常會主動找前輩傾談,或是前往其他地方嘗試不同的東西,從中汲取靈感。有時她需要幾個失眠的夜晚,才能將幾個看似不相干的元素巧妙組合,推出有趣的新點子,吸引客人前來。
她舉例說明:幾款味道濃重、一般人難以接受的清酒,她找到一位客席調酒師,將其創作出三款更容易入口的雞尾酒。同時搭配清酒與食物的品鑑組合,讓客人體驗不同的風味效果。此外,他們還邀請樂團進行了一場 Acoustic Set,配合主題舉辦「Emo Hardcore Night」。當晚全場爆滿,無論是為雞尾酒、清酒還是 Live Band 而來,每個單位都因彼此的合作而獲得成功。因為大家都明白,舉辦活動最怕沒人來,但只要每個合作單位都能帶動少量人潮,就能匯聚成一場巨大的成功。

如果能對十年前的自己說一句話,ENSO 円相的店主 Fish 會堅定地說:「這條路會很難走,但你要堅持呀!即使失望,也不能絕望,不要後悔每一個決定或行為。後悔的人通常都是因為沒有做而後悔,所以『勇』字要掛在心上繼續衝,要有勇氣也要有謀略。」這句話不僅是對未來挑戰的預警,更是對自己內心力量的肯定,提醒自己即使身處困境,也要保持信念,並以智慧應對。
ENSO的「活在當下」:筆尖下的生命哲學
ENSO 円相希望大家當下最能透過他們的品牌感受到的,正是這種深刻的生命哲學。Fish 至今仍清晰記得,在開業前的平安夜,她親手將「ENSO要你係度活在當下嘅理念」一筆一筆地寫在啤酒牆上,並印在菜單上,以最直接的方式向顧客傳達 ENSO CIRCLE 的精神:
「我們控制不了不合理的發生,世事無常,我們都必須經歷心智的磨練,學習回到最真實的當下,禪要你來到生活體驗及感受一切。」這段文字傳達了即使面對不可控的變數,人們也應專注於當下,從中學習與成長。
「Go with the flow :隨波逐流並非指在亂流下仍要沒靈魂地跟隨或如此認命,反而要學會把握波浪起伏時,有能力去駕馭它,不輕易動搖你的核心價值及影響狀態,隨緣而不勉強。」這句話則鼓勵大家在變動中保持彈性,但同時堅守自我,不隨意被外在環境影響核心價值。
「把當刻轉化為有趣的體驗,趁你仍有力氣時,及時去愛、及時珍惜、及時享樂、把握每一個當下。」這段話是 ENSO 品牌哲學的核心,鼓勵人們積極地將當下的每一刻轉化為有意義的體驗,把握有限的時間,去愛、去珍惜、去享受,活出無悔的每一天。透過這些文字,ENSO 不僅僅是提供餐飲服務,更希望成為一個引導顧客活在當下的精神綠洲。

A Message from the founder
The founding of ENSO stemmed from owner Fish's passion for craft beer at the age of 20. Dissatisfied with the weak drinking culture in Hong Kong and the prejudice against women drinking, she resolved to open a restaurant and bar in Kowloon ten years later to promote craft beer. Over these ten years, she accumulated management experience, obtained beer and sake sommelier qualifications, hoping to build ENSO into a "second home" full of human warmth, where everyone feels safe and happy.
If three adjectives were to summarize the brand ENSO, they would be "human warmth," "professional," and "atmospheric." These three words are not only Fish's original intention and core of founding the shop, but also the atmosphere she hopes guests can actually feel and that employees can create with her. She deeply believes that only when employees are happy can they transmit this happiness to guests, jointly creating a vibrant space.
ENSO's initial opening was severely hit by the pandemic, with dining restrictions and depleted funds. Fish refused to give up, and in sleepless nights, she came up with countermeasures, launching activities like "Beer Flight Club" to unite other bars to "support each other" and encourage consumption. She firmly believes that "everyone should be good together, and prosperity should be together," actively seeking cooperation. The affirmation and word-of-mouth from guests became her strong motivation to persevere.
Brand Story
Self-Rescue from Creative Exhaustion: Communication, Exploration, and Combination
Fish's "down" state is mostly related to poor business or lack of interest in events. However, she never lets herself sink, usually actively seeking advice from seniors or going to other places to try different things and draw inspiration from them. Sometimes she needs a few sleepless nights to cleverly combine seemingly unrelated elements and launch interesting new ideas to attract guests.
She gives an example: for several strong-flavored sakes that are generally difficult for people to accept, she found a guest bartender to create three cocktails that are easier to drink. At the same time, she paired sake with food tasting combinations, allowing guests to experience different flavor effects. In addition, they invited a band to perform an Acoustic Set, and organized an "Emo Hardcore Night" in line with the theme. The venue was packed that night, and whether they came for cocktails, sake, or the Live Band, each unit achieved success through their cooperation. Because everyone understands that the biggest fear when organizing events is that no one will come, but as long as each cooperating unit can attract a small crowd, it can converge into a huge success.
"Timely Rain - Mileage": Priceless Moments of Moving Forward Together
If the brand ENSO were a song, Fish would choose "Mileage" by Timely Rain. She believes this song represents and witnesses everyone – not just herself, but also the employees, guests, and all the musicians who come to perform. In the days since ENSO opened, they have always been with everyone, moving forward together, and these moments are priceless.
The lyrics, "No matter how far this road goes, it's impossible to estimate or predict. Even if this journey is sorrowful, we haven't lost our self-respect. Run, the street scene has sunk into dimness, a day passes quickly but brings too many hardships. Run, no need to regret or sigh anymore, grasp your strength and go find it," encourage all fellow travelers. And what touches Fish's heart most is the line: "You need to have a little more patience, and you will always wait for the perfect scenery." This sentence has become ENSO's belief and motivation to persevere when facing challenges.
To My Ten-Years-Ago Self: A Journey of Perseverance and Wisdom
If she could say one thing to her ten-years-ago self, Fish, the owner of ENSO, would firmly say: "This road will be difficult, but you must persevere! Even if you are disappointed, you cannot despair, and do not regret every decision or action. People who regret are usually those who regret not doing something, so keep the word 'courage' in your heart, you need to have courage and strategy." This sentence is not only a warning about future challenges but also an affirmation of her inner strength, reminding herself to maintain faith and respond with wisdom even in difficult situations.
ENSO's "Living in the Present": Life Philosophy Under the Pen
ENSO hopes that what everyone can most profoundly feel through their brand in the present moment is this deep life philosophy. Fish still clearly remembers that on Christmas Eve before opening, she personally wrote the "ENSO's philosophy of living in the present" stroke by stroke on the beer wall and printed it on the menu, conveying the spirit of ENSO CIRCLE to customers in the most direct way: "We cannot control unreasonable occurrences, things are impermanent, and we must all experience the tempering of our minds, learning to return to the most real present moment. Zen wants you to come and experience and feel everything in life." This text conveys that even when facing uncontrollable variables, people should focus on the present, learn, and grow from it.
"Go with the flow: Going with the flow does not mean following without a soul or accepting fate in a turbulent situation. Instead, you should learn to grasp the ups and downs of the waves, have the ability to ride them, and not easily shake your core values and affect your state. Go with the flow without forcing it." This sentence encourages everyone to remain flexible in change, but at the same time to stick to their core values and not be easily influenced by the external environment.
"Transform the present moment into an interesting experience. While you still have strength, love in time, cherish in time, enjoy in time, and seize every present moment." This passage is the core of ENSO's brand philosophy, encouraging people to actively transform every moment of the present into a meaningful experience, seize limited time to love, cherish, and enjoy, and live every day without regret. Through these words, ENSO is not just providing dining services but also hopes to become a spiritual oasis that guides customers to live in the present.
