一個尋常的日子裡，Paul心中萌生了一個「離譜」的念頭。他堅信人生在世，至少要轟轟烈烈地做一件與眾不同的事。當生命走到盡頭，財富的多寡早已不重要，真正能被銘記的，是在這世上留下了多少影響與成就。這個信念，像一顆火種，點燃了他將團隊成員的人生故事與感悟，融入一杯杯獨特雞尾酒的熱情。於是，他將目光投向了香港最具代表性的交通工具——天星小輪，一個奇妙的二合一空間應運而生：它既是承載著百年記憶的渡輪，也是一個充滿故事的酒吧。Paul希望，在這個獨特的空間裡，能與每位來訪者一起，繼續書寫屬於彼此的篇章。

若要為 Stay bar 描繪出三個靈魂詞彙，那便是「溫度」、「愚蠢」和「共贏」。

首先是「溫度」。對 Stay bar 而言，溫度是人與人之間最珍貴的連結。無論是調酒師與顧客的眼神交流，管理者與員工的默契配合，甚至是與天星小輪船長及船員的每一句問候，他們都希望彼此之間充滿溫暖。因為他們深信，有溫度的地方，才會有真誠的交流和情感的流動。

再來是「愚蠢」。Stay bar 堅定地秉持著「Stay foolish」的精神。就像他們以日本士多啤梨為靈感創作的雞尾酒，在這個充滿挑戰的經濟環境下，選擇投身實體行業，或許在許多人眼中是個「愚蠢」的決定。然而，他們甘願保持這份「愚蠢」，因為只有勇敢地踏出那一步，才能預見接下來可能發生的奇妙。

最後是「共贏」。Stay bar 從創立之初就深信「一個人走得快，但一群人才能走得遠」的道理。互惠共贏，是他們酒吧第一個核心理念。因此，他們積極與香港本地的各個品牌攜手合作，渴望在天星小輪這個富有意義且歷史悠久的交通工具上，共同創造更多商業價值，累積更多難忘的回憶。

然而，創業的道路並非一帆風順。一個讓他們至今難忘、幾乎想放棄的時刻，發生在12月12日。那一天，他們才剛得知可以營運這間酒吧，而距離聖誕節這個黃金檔期，只剩下短短十幾天的時間。這意味著，所有的品牌設計、員工培訓、菜單印刷，甚至整個場地的裝修，都必須在這極短的時間內完成。是團隊成員之間強大的凝聚力，以及對夢想堅定不移的信念，支撐著他們度過了那個近乎不可能的挑戰，最終趕上了聖誕節的開幕。

在眾多受歡迎的雞尾酒中，「Stay Home」無疑是特別的一款。這杯以香港為主題的調酒，將不同基酒浸泡烏龍茶，並用心學習茶餐廳的沖泡技藝，只為調製出一杯最正宗的港式凍檸茶風味。靈感來自於創業初期的一則新聞：去年香港移民人數創下新高。他們想對每一位身處異地的香港人說：「無論走到哪裡，香港都是你的家。如果你願意，Stay bar也能成為你的家。」

當靈感枯竭時，他們選擇「Me Time」。獨自一人，停下來，想一想。Stay bar的存在，也希望大家能在這裡沉澱思緒，好好休息，為了走更遠的路。

最讓他們印象深刻的客人，莫過於情人節那天，那位獨自前來的男士。他原本預訂了兩人座，卻只身一人，獨自坐在船頭，望著大海，一杯接一杯地喝著。周遭全是成雙成對的情侶，更顯得他形單影隻。當他喝到第六杯時，主動與店主攀談，分享了他剛分手的苦澀，以及兩個月前就預訂此地的期待。他失落的表情，令人心痛。雖然菜單上沒有「See You Tomorrow」這款酒，但調酒師仍特意為他調製了這杯，送上情人節的祝福，希望他能看見明天的美好。

A Message from the founder

On an ordinary day, Paul, the founder of Stay bar, conceived an "outrageous" idea. He firmly believes that in life, one must at least do something extraordinary and memorable. When life ends, the amount of wealth no longer matters; what truly remains are the impact and achievements left behind. This belief, like a spark, ignited his passion to infuse his team members' life stories and insights into unique cocktails. Thus, he set his sights on Hong Kong's most iconic mode of transport—the Star Ferry—and a wondrous two-in-one space came into being: a ferry carrying a century of memories, and a bar brimming with stories. Paul hopes that in this unique space, he can continue to write chapters with every visitor.

To describe a Stay bar with three core values, they would be "warmth," "foolishness," and "win-win."

Firstly, "warmth." For Stay bar, warmth represents the most precious connection between people. Whether it's the eye contact between bartender and customer, the tacit understanding between management and staff, or even every greeting exchanged with the Star Ferry captain and crew, they wish for warmth to permeate their interactions. They deeply believe that only in a place filled with warmth can there be sincere exchanges and emotional flow.

Next, "foolishness." Stay bar firmly adheres to the spirit of "Stay foolish." Just like their cocktail inspired by Japanese strawberries, choosing to enter a physical business in this challenging economic environment might seem like a "foolish" decision to many. However, they are willing to maintain this "foolishness," because only by bravely taking that step can they foresee the wonderful things that might happen next.

Lastly, "win-win." From its inception, Stay bar firmly believed in the principle that "one person walks fast, but a group walks far." Mutual benefit and win-win is their bar's primary core concept. Therefore, they actively collaborate with various local Hong Kong brands, eager to collectively create more commercial value and accumulate more unforgettable memories on this meaningful and historic mode of transport, the Star Ferry.

However, the path of entrepreneurship was not smooth. A moment they still remember, when they almost gave up, occurred on December 12th. On that day, they had just learned they could operate this bar, and there were only a little over ten days left until the golden Christmas season. This meant that all brand design, staff training, menu printing, and even the entire venue's renovation had to be completed within this extremely short timeframe. It was the strong cohesion among team members and their unwavering belief in their dream that sustained them through that almost impossible challenge, ultimately allowing them to open for Christmas.

A Drink, A Story, A Life

Every time a bartender completes a drink, it's a touching moment of "this is what I want to do." Because every cocktail incorporates a unique life story and philosophy. What customers taste is not just alcohol, but a series of stories thoughtfully narrated.

City Charm: The Fragrance of Local Creations

Stay bar deeply believes that "local creations" and "handicrafts" are the unique charm of this city, and a testament to its cultural history. To this end, they not only collaborate with painters, allowing artists to create freely while the bar is open, but also partner with local perfume brands to transform cocktail flavors into perfumes, allowing customers to experience the unique charm of each drink through scent before ordering.

"Stay Home": A Haven for Hong Kongers' Souls

Among the many popular cocktails, "Stay Home" is undoubtedly a special one. This Hong Kong-themed concoction infuses various base spirits with oolong tea, diligently learning the brewing techniques of local tea restaurants to craft the most authentic Hong Kong-style iced lemon tea flavor. The inspiration came from a piece of news in the early days of their venture: last year, Hong Kong's emigration numbers hit a new high. They want to tell every Hong Konger living abroad: "No matter where you go, Hong Kong is your home. If you are willing, Stay bar can also be your home."

Insistence on Small Details: The Philosophy of Iced Glasses

Some details might go unnoticed by customers, yet they are core beliefs of Stay bar. For example, "iced glasses." Temperature affects the flavor of cocktails, so they use liquid nitrogen as low as -10 degrees Celsius to pre-chill each glass before pouring the alcohol. This not only creates a visual smoky effect but also extends the "lifespan" of the cocktail, allowing the wonderful flavors to linger longer in the mouth.

Me Time: Contemplation When Inspiration Wanes

When inspiration runs dry, they choose "Me Time." Alone, they pause and reflect. The existence of Stay bar also aims to provide a space for everyone to calm their thoughts, rest well, and prepare for a longer journey ahead.

Valentine's Day Tears: The Story of a Single Customer

The most memorable customer was undoubtedly the gentleman who came alone on Valentine's Day. He had originally booked a table for two, but was by himself, sitting at the bow of the boat, gazing at the sea, drinking glass after glass. Surrounded by couples, his solitude was even more pronounced. When he reached his sixth drink, he initiated a conversation with the owner, sharing the bitterness of his recent breakup and his anticipation of this booking made two months prior. His dejected expression was heartbreaking. Although "See You Tomorrow" was not on the menu, the bartender specially prepared this drink for him, offering Valentine's blessings and hoping he could see the beauty of tomorrow.
